Soft and delicious, these rolls are perfect both for breakfast — served with jams and spreads — and for a snack, paired with cold cuts and cheeses. They’re made simply by kneading together flour and butter.

- Arborea High Quality Fresh Milk 280 ml
- Manitoba flour 500 g
- Fresh brewer’s yeast 12 g
- Arborea butter + 1 knob for greasing 70 g
- Sugar 10 g
- Honey 5 g
- Eggs 1
- Egg yolk 1
- Salt 5 g

Tip
- 1 To prepare milk bread, soften the butter and set it aside. In a bowl, pour the sifted flour, then add the sugar, yeast, whole egg, and honey. Add the milk as well and mix the ingredients together. Continue kneading by hand or, even better, with a stand mixer, until you obtain a smooth, well-developed dough. At this point, add the softened butter in two or three steps, waiting each time for it to be fully absorbed into the dough. Knead again, and finally, add the salt.
- 2 Transfer the dough to a lightly oiled work surface and knead it for about fifteen minutes, until smooth. Alternatively, as mentioned, you can use a stand mixer. Try to shape the dough into a ball, then place it in a buttered bowl, cover it with plastic wrap, and let it rest for about two hours, or until it doubles in size.
- 3 Once the resting time has passed, the dough will have risen in volume. Knead it again briefly and shape it into two loaves. Divide these into about 30 pieces. Then, roll each piece with your hands to form a perfectly round shape and place the soft rolls on a baking tray lined with parchment paper.
- 4 In a bowl, mix the egg yolk with a little milk. Use this mixture to brush your milk rolls. Let them rise again, covered with plastic wrap, until their volume has doubled. Then bake them in a preheated static oven at 200°C (390°F) for about fifteen minutes.
- 5 Once baked, let them cool and serve them with whatever you prefer. Your milk bread is ready — a soft and versatile recipe.
