For the dough
- Whole wheat flour 200 g
- Arborea Ricotta 200 g
- Brown sugar 200 g
- Eggs 2
- Baking powder 12 g
- Salt 1 pizzichi
- Zest and juice of orange 1
- Saffron 0.16 g

Instructions
- 1 Drain the ricotta thoroughly and pass it through a sieve. Sift the flour together with the baking powder twice.
- 2 Using an electric mixer, beat the eggs and sugar until the mixture is pale and fluffy. Gradually fold in the sieved ricotta with a spatula, mixing gently to avoid deflating the eggs, until smooth and homogeneous.
- 3 Carefully fold in the sifted flour and baking powder, then add the orange juice and zest. If using saffron, dissolve it in a small amount of orange zest. Adjust the amount of juice so the batter is soft but not too wet. Mix gently until the batter is smooth, light in color, and free of lumps.
- 4 Preheat a static oven to 180°C (356°F). Grease and flour a bundt cake pan, pour in the batter, and bake for about 45 minutes.
- 5 Insert a toothpick into the cake; if it comes out dry, the cake is ready. Let it cool, then dust with powdered sugar before serving.
