  • 1 To prepare the Sardinian ladyfingers, start by separating the yolks from the egg whites, then place the yolks in a large bowl with half the sugar and whisk them well until you obtain a frothy mixture, also adding the lemon zest.
  • 2 In another bowl, whisk the egg whites, and once they begin to thicken, add the remaining sugar and continue whisking until they become glossy and thick.
  • 3 At this point, fold the stiffly beaten egg whites into the egg yolk and sugar mixture, mixing from the bottom up using a spatula. Finally, add the sifted flour a little at a time, continuing to mix.
  • 4 Spoon the resulting mixture into a piping bag and pipe the elongated cookie shapes onto a baking sheet lined with parchment paper. Before baking, run the ladyfingers over the same line several times and dust with powdered sugar.
  • 5 Bake in a preheated oven at 160° for 20 minutes and, once they are golden brown, remove your Sardinian ladyfingers from the oven and let them cool before serving.

To make the biscuits even more fragrant, you can add finely grated lemon zest, vanilla essence, or cinnamon to the mixture.

If you want to make the biscuits even softer and lighter , try replacing a small portion of the flour with potato starch . Furthermore, once you’ve formed the biscuits on a baking sheet, sprinkle them generously with powdered sugar and brown sugar before baking. This step will allow you to obtain an even more evident sugary crust on the surface .
