- Arborea UHT whipping cream 330 ml
- Lemon juice 100 ml
- Grated lemon zest 1.5
- Sugar 155 g
- Egg whites 70 g
- Limoncello 40 ml

- 1 The process isn't complicated. Peel the lemons, grate the zest, and squeeze the juice, straining it through a sieve to remove the seeds. Meanwhile, whip the cream in a bowl and refrigerate.
- 2 Place half the lemon juice and the sugar in a small saucepan and heat without stirring until the syrup reaches 121°C. This will require a little patience and a kitchen thermometer, but this will pasteurize the egg whites, protecting them from any bacterial contamination. When the temperature approaches 121°C, place the egg whites and grated zest in the bowl of a stand mixer and beat on low speed until foamy. Once the syrup reaches the desired temperature, slowly pour it over the egg whites and increase the speed to high. Continue beating for several minutes until you obtain a nice, glossy meringue. At this point, take the cream and gently fold the two mixtures together, stirring from the bottom up. Incorporate the limoncello and the remaining lemon juice using a spatula. This will result in a smooth lemon cream.
- 3 Pour the mixture into a silicone mold and smooth the surface. Let it set in the freezer for at least 5 hours.
- 4 Remove the lemon semifreddo from the freezer, invert it onto a plate, decorate, and refrigerate for half an hour before slicing. You can garnish with fruit or a few mint leaves. Now you're ready to serve your chilled dessert.
