Sardinian Meraviglias
Description
There are famous Carnival sweets throughout Italy, known by different names depending on the region — commonly called chiacchiere. In Sardinia, one traditional version of these crispy treats is called Meraviglias, also known as Sardinian chiacchiere.
To make these crunchy Carnival sweets, Sardinians use fine durum wheat semolina instead of all-purpose flour, as is common in many other Sardinian desserts.
Follow this recipe step by step to make as many Meraviglias Sarde as you like and enjoy their irresistible crunch and sweetness.

For the dough
- Fine durum wheat semolina 500 g
- Brandy 40 ml
- Vernaccia 100 ml
- Arborea butter 50 g
- Granulated sugar 50 g
- Lemon zest 5 g
- Salt 1 pizzico
To fry
- Frying oil q.b.

- Icing sugar q.b.
Instructions
- 1 In a bowl, combine the semolina flour, granulated sugar, pinch of salt, lemon zest, and butter. Start kneading, gradually adding the brandy alternated with the Vernaccia wine. Work the ingredients until you obtain a smooth, compact dough.
- 2 Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
- 3 Remove the dough from the fridge and roll it out on a floured surface to a thin sheet. Using a pastry wheel, cut the dough into rectangles to create the classic chiacchiere shape.
- 4 Heat a pot with plenty of frying oil. When hot, fry the Meraviglias Sarde until golden brown. Remove and drain on paper towels to absorb excess oil.
- 5 Dust generously with powdered sugar and enjoy!
