- Arborea whole milk 330 ml
- Dark chocolate 70 g
- Unsweetened cocoa powder 60 g
- Sugar 30 g
- “00” flour 50 g
- Arborea butter 45 g
- Vanilla bean 1
Instructions
Tips
-
1
To prepare the chocolate pudding, first finely chop the dark chocolate with a knife.
-
2
Place a small saucepan with high sides on the stove, pour in the milk, and add the whole vanilla bean.
-
3
In another small saucepan, melt the butter. Once melted, add the sugar, the chocolate flakes, and the unsweetened cocoa powder, mixing everything with a whisk. As soon as the chocolate has melted completely, add the flour and stir again. Remove the saucepan from the heat and gradually pour in the hot milk, stirring continuously with the whisk to prevent lumps from forming. Then, put it back on the stove.
-
4
Let the cream cook over low heat for another 5–6 minutes, stirring constantly so it doesn’t stick to the bottom, until it thickens.
-
5
If you wish to make individual portions, rinse some pudding molds with water, and once the cream is thick enough, turn off the heat and pour it into the molds. Alternatively, you can use a single large pudding mold. Let the mixture cool at room temperature, then transfer the molds to the refrigerator and leave the chocolate pudding to rest for about 3 hours.<br>When ready to serve, unmold the puddings and place them in the center of dessert plates.

Variations
Pudding is a versatile dessert that can take many forms and flavors, and it’s both quick and easy to make.
The chocolate version is by far the most popular. You can prepare it with cocoa powder, dark chocolate, milk chocolate, or white chocolate, and decorate it with whipped cream or chocolate chips.
Another variation is vanilla pudding, with its delicate flavor and sweet aroma — made the same way but replacing chocolate with vanilla bean and adding gelatin sheets. It can be topped with fruit, whipped cream, or sweet sauces.
Other delicious alternatives include ricotta pudding, chestnut pudding, hazelnut pudding, acacia honey pudding, and fruity versions like banana, strawberry, or mixed berries.
For something lighter and refreshing, try lemon pudding, similar to custard cream but with a smoother and more delicate texture.
Did You Know?
The word budino comes from the Latin
botellus
, meaning “animal intestine.” “Black pudding” and “white pudding” once referred to savory dishes like blood sausage and regular sausage. Originally, pudding was a savory dish, very common in Veneto, served as a main course rather than a dessert.
The first recorded sweet version appeared between the 1st and 2nd centuries AD in De re coquinaria by the Roman gourmet Marcus Gavius Apicius — made with honey, eggs, milk, and flour. These sweet, nourishing creams were considered energy-rich foods and were even served in medieval hospitals and royal courts.
In Great Britain, however, boiled pudding was a daily staple in the navy.
Turkish cuisine also offers a variation of this dessert, known as
Noah’s pudding
, a kind of sweet, thick soup containing dried fruit and cereals.
In North America, pudding is a creamy dessert based on milk and eggs, often served with whipped cream and cranberries.
In South America, the European-style pudding is enriched with tropical fruit and often paired with soft cheeses.
