Ingredients
to recalculate the ingredient amounts
- Arborea UHT whipping cream 100 g
- 70% dark chocolate 130 g
- Orange zest q.b.
Instructions
- 1 First, take the chocolate and roughly chop it with a knife — you can use dark, white, or milk chocolate. If you find dark chocolate too bitter for your taste, you can add a bit of sugar to the cream to gently sweeten the flavor.
- 2 Now that the chocolate has been chopped, take a small saucepan and pour in the UHT whipping cream along with some orange zest, keeping the heat low. Add all the chocolate, and using a whisk, stir until the chocolate is completely melted — without bringing it to a boil. The result should be a smooth cream with a soft, slightly thick texture. Quickly blend it with an immersion blender to make your ganache even more velvety.
- 3 Once ready, you can pour it directly into the base of a tart or use it as a topping for a cake. Alternatively, let your ganache cool to room temperature before using it to decorate a dessert — simply transfer it into a piping bag with your preferred nozzle. To make a lighter ganache, whip it briefly with a hand mixer once cooled and use it to decorate your pastries. Remember to store the chocolate ganache in a bowl in the refrigerator to keep it fresh.
