Instructions

  • 1 To make the walnut cake, start by blending the shelled walnuts and 50g of sugar in a blender. Set aside a few walnuts for the final garnish. Beat the powdered sugar with the softened butter until frothy. Add the eggs one at a time, continuing to beat and waiting until they are fully incorporated before adding the next. If the mixture tends to tangle as you add the eggs, add a level tablespoon of sifted cornstarch after each egg. Once the mixture is smooth, add the vanilla.
  • 2 Combine the chopped walnuts with the sugar and cornstarch, which you should sift together with the baking powder. Mix the mixture with a spatula and pour it into a greased baking pan or cake pan.
  • 3 Bake in a preheated oven at 180°C (350°F) for about 40 minutes. You can check for doneness by inserting a toothpick. If the tip comes out clean, your walnut cake is ready.
  • 4 Let it cool. Then, decorate the surface of the walnut cake with the reserved walnut kernels and powdered sugar.
