The Mascarpone Cheesecake is a fresh, creamy, no-bake cake that comes together in very little time. It’s simple to make, and if you’re short on time, you can even prepare it a few days in advance — just store it first in the freezer and then in the fridge before serving.
There here are several versions of this delicious cake — it can be enriched with fruit jam, as in this recipe, or with chocolate, or, for those with a sweet tooth, with any kind of chopped nuts or toppings.
A dessert that, with very little effort, will make all your guests happy.
Ingredients

- Arborea Lactose-Free Mascarpone 165 g
- Wholegrain biscuits 165 g
- Arborea butter 55 g
- Arborea fresh cream 135 g
- Icing sugar 40 g
- Gelatin sheets 3 g
- Milk 1 cucchiai
- Cocoa powder 1 cucchiai
- Granella di nocciole 55 g
- Berry jam 145 g
- Water 15 g
- Mixed berries q.b.
- Ground cinnamon q.b.
- Lemon juice q.b.
Instructions
- 1 Prepare the base: <br>Blend the biscuits in a mixer together with the melted butter, cocoa powder, cinnamon, and chopped hazelnuts for extra crunch. For a fresher note, you can also add some grated organic lemon zest.<br>Pour the mixture into a springform pan lined with parchment paper on the bottom and sides (or use a silicone mold if you plan to freeze it). Press the mixture down firmly with the back of a spoon and refrigerate to set.
- 2 Prepare the filling:<br>In a bowl, mix the lactose-free mascarpone with the icing sugar using an electric whisk. Meanwhile, soak the gelatin in 20 g of cold water for 10 minutes, then dissolve it — without squeezing — in warm milk.<br>Add the gelatin mixture to the mascarpone and stir well. Lightly whip the cream until semi-soft, then fold it gently into the mascarpone mixture using a spatula.
- 3 Assemble the cheesecake:<br>Retrieve the pan from the fridge and pour in the cream mixture. Smooth the surface and refrigerate for at least 3 hours, or freeze if you prefer a firmer texture.
- 4 Prepare the topping:<br>In a small saucepan, warm the berry jam over low heat with a little water and a few drops of lemon juice. Strain through a sieve, then pour it over the cheesecake surface. Chill in the fridge for another 30 minutes.
- 5 Decorate and serve:<br>Garnish with fresh fruit such as blueberries, raspberries, or red currants, and sprinkle with chopped hazelnuts. Serve chilled and enjoy this creamy delight!
