- Lemon Zest 1
- Baking powder 16 g

Instructions
- 1 Making these Sardinian biscuits is very simple. Crack the eggs into a bowl, add the sugar, and beat with an electric whisk until the mixture becomes light and fluffy.
- 2 Unite lo strutto alle uova e lavoratele ancora con lo sbattitore per incorporarlo, quindi aggiungete anche la buccia Add the lard and continue whisking to incorporate it, then add the grated zest of two lemons, the sifted flour, and the baking powder. Mix with a spoon until you get a dough that is soft but firm enough to work with your hands. Once it reaches this consistency, cover and refrigerate for about 1 hour.
- 3 When the dough has firmed up, roll it out on a floured surface to about ½ cm thick, then cut out your gallettinas in the shapes you prefer.
- 4 Arrange the biscuits on a baking tray lined with parchment paper, brush them with milk, sprinkle with granulated sugar, and bake in a preheated oven at 170°C for about 12 minutes. When golden, remove them from the oven and let them cool before serving.
