Description

Despite its name, which might bring to mind a cake, the Gateau di Mandorle (or Gattò de Mendula) is actually a delicious almond brittle typical of Sardinia, even mentioned in several literary works by Sardinian authors.

You only need three ingredients to make it: almonds, sugar, and lemon. Come and discover how to prepare the traditional Sardinian Almond Gateau.

Instructions

  • 1 Preparing the Almond Gateau is quite simple. First, slice the almonds thinly and toast them in the oven for a few minutes.
  • 2 Pour the sugar into a large non-stick saucepan and caramelize it together with the juice of one lemon, being careful not to let it burn. Once it takes on the typical golden color of caramel, gradually add the almonds and stir to combine the ingredients well.
  • 3 For the next step, it’s best to have a marble surface available. Grease your work surface with almond oil or a neutral oil, then pour the sugar and almond mixture onto it. Roll it out thinly using a large lemon as a rolling pin. Cut the Almond Gateau into diamond shapes with a wet knife. This must be done quickly, as the sugar cools and hardens fast. To serve, place the diamond pieces on lemon leaves — just as tradition dictates in Sardinia.
