Servings
  • Arborea UHT Cooking Cream 250 ml
  • Arborea High Quality Fresh Milk 300 ml
  • Grated coconut 100 g
  • White sugar 50 g
  • Vanilla pod 1
  • Sheet gelatin 8 g

Instructions

  • 1 Begin by hydrating the gelatin in 30 g of water (about 5 times its weight). Heat the milk slowly, then add the sugar and the split vanilla pod. Stir in the grated coconut and bring to a gentle boil, mixing well. Once removed from heat, add the hydrated gelatin along with its soaking water.
  • 2 Once everything is well combined, let it cool. If you prefer, strain the mixture to remove the coconut that has flavored the milk, or leave it unstrained for a more rustic texture. Once cooled, whip the cream and fold it into the flavored milk mixture.
  • 3 Pour the cream into serving cups and refrigerate for a couple of hours. Serve as a chilled dessert, garnished with lemon zest, chocolate shavings, or fresh coconut.
