  • 00 Flour 300 g
  • Coconut flour 100 g
  • Eggs 240 g
  • Sugar 200 g
  • Seed oil 100 ml
  • Arborea UHT whole milk 80 ml
  • Raisins 100 g
  • Baking powder 16 g
  • Icing sugar 250 g

Instructions

  • 1 To make the yogurt panettone, start by separating the egg yolks from the egg whites, then beat the egg whites until stiff in a separate bowl and whisk the egg yolks with the sugar in a large bowl.
  • 2 Once the mixture is light and fluffy, add the oil, mixing well, taking care not to deflate the mixture. Then add the yogurt, sifted flour, baking powder, and finally the raisins, alternating the additions with a drizzle of milk.
  • 3 Once the mixture is thick and full-bodied, add the beaten egg whites, mixing from the bottom up and incorporating plenty of air. For firmer egg whites, beat them with a small amount of the sugar called for in the recipe.
  • 4 At this point, pour the mixture into a panettone mold or a 24 cm diameter baking pan with high edges, after having lined it with baking paper and buttered it.
  • 5 Bake the preparation in a preheated oven at 180° for 45 minutes and at the end of the cooking time do the toothpick test, to check that it is dry and that the cake is cooked.
  • 6 Once cooked, remove your yogurt panettone from the oven, let it cool, and sprinkle it with icing sugar before serving.
