Instructions

  • 1 Start by taking two bowls and placing the egg whites in one and the yolks in the other. Beat the egg whites with 50g of granulated sugar until stiff. Then, add the remaining sugar to the yolks and mix with an electric mixer until smooth. Then, add the cream cheese and mascarpone and mix first with a ladle and then with the whisk. Finally, add the egg whites and mix with a ladle so they don't deflate.
  • 2 Prepare the coffee in a moka pot for 4 or 6 people, then pour it into a bowl a little at a time and dip the ladyfingers, quickly stirring them in the coffee and then removing them immediately.
  • 3 Take a baking dish and arrange a first layer of soaked ladyfingers, then add the cream cheese mixture and spread it out in a fairly thick layer. Repeat this process, creating more layers, and refrigerate for half an hour before serving. Dust with cocoa powder using a sieve and serve.
