  • 1 To prepare gluten-free, lactose-free light yogurt cookies, combine the rice flour, brown sugar, baking powder, and a pinch of salt in a large bowl. Add the butter at room temperature and begin working the ingredients with your hands until well blended.
  • 2 When the butter starts to crumble, add the yogurt, mixing with a spoon to incorporate it. Then, add the egg one at a time, continuing to mix until the dough becomes smooth and compact. Cover the bowl with plastic wrap and refrigerate overnight.
  • 3 Once rested, shape the dough into small rolls and close them to form little rings. Place them on a baking sheet lined with parchment paper. Repeat until all the dough is used.
  • 4 Brush the cookies with some lactose-free milk, sprinkle with brown sugar, and bake in a preheated oven at 180°C (356°F) for 15–20 minutes. They should be soft inside and golden on top. Allow to cool on the baking sheet before serving. Optionally, dust with powdered sugar before serving.

Variations

If you want to give these little treats an alternative flavor, use fruit-flavored lactose-free yogurt instead of plain, mixed with small pieces of fresh fruit. This will give you delicious cookies with an even softer texture.

For a more indulgent version, you can add chocolate chips or create small two-tone balls with the dough. Once baked in a conventional oven and cooled, dip half of each cookie in melted dark chocolate and place them on a parchment-lined baking sheet. Let them rest until the chocolate has completely set. You can refrigerate them to speed up the process.
