Malloreddus alla Sassarese
One first course that is typical of Sardinian cuisine is malloreddus alla sassarese, where the two main ingredients are malloreddus, the famous Sardinian gnocchetti, and cream, which makes for a delicious, rich sauce.
This recipe is so simple that you can prepare it last minute: all you need are Sardinian gnocchetti and a good sauce.
For an extra hint of flavour, don’t forget to garnish with gran campidano.
To prepare malloreddus alla sassarese, boil salted water on the hob.
While you wait, pour the cream into a small pan, add salt and gradually add the semolina, keeping the heat low and stirring constantly.
Cook for 15 minutes until you obtain a creamy texture.
Now boil the gnocchetti “al dente”, drain them and serve.
Serve your malloreddus alla sassarese with the cream sauce you prepared previously, and garnish every plate with a spoonful of grated gran campidano.
