Carasau Bread Pie
INTRODUCTION
Carasau bread is a versatile ingredient used in Sardinian cuisine. Thanks to its crunchy texture and its thin sheets, it has become the main ingredient in a gourmet recipe: Carasau bread pie.
The combination of a tasty tomato sauce and goat cheese slices create this delicious first course, which is perfect for a special occasion.
It’s easy to cook, and with a hint of Sardinian flavours it can be served as an original reinterpretation of the more traditional pie.
procedure
STEP 1
To prepare carasau bread pie, start by finely chopping the garlic and browning it in a large pan.
STEP 2
Add the tomato puree and cook it over a low heat for 15 minutes, seasoning with salt and pepper.
STEP 3
Grease a baking pan with oil, pour in a ladle of sauce and then place the carasau bread sheets to form a homogeneous layer.
STEP 4
Cover the carasau bread with more puree and with goat cheese slices, and continue to alternate the layers until all the ingredients have been used up.
STEP 5
The last layer should be sauce. Sprinkle this with grated parmesan.
STEP 6
Now bake in the pre-heated oven at 180° for 25 minutes, then garnish with basil leaves and serve.
