Description

Savory pies are among the most popular dishes to serve during evenings with friends: they are, in fact, the perfect appetizers even for an impromptu dinner.
Here’s a recipe for a savory puff pastry tart with goat cheese and courgettes, delicious and easy to make.
You can replace the puff pastry with brisée or savory shortcrust pastry and enrich it with other vegetables, cured meats, and cheeses.
These savory pies are also ideal for a picnic or a birthday buffet , and you can easily vary the filling to satisfy the tastes of all your guests.

  • Sliced Goat Cheese from Fattorie Girau 200 g
  • Round puff pastry 1
  • Genoese courgettes 200 g
  • White onion 1
  • Datterini tomatoes 150 g
  • Arborea Gran Campidano 100 g
  • Eggs 2
  • Garlic 0.5 spicchi
  • Arborea fresh cream 50 g
  • Salt q.b.
  • Pepper q.b.
  • Extra virgin olive oil 50 ml
  • Basil q.b.

Instructions

  • 1 To prepare our savory pie, the first thing to do is cook the vegetables. Take the zucchini, wash them, trim them, cut them into not-too-thin rounds, and cook them for about 15 minutes over low heat in a pan with a couple of tablespoons of olive oil and the chopped onion. Also wash the datterini tomatoes, cut them in half, place them in a small bowl, and season with salt, pepper, a few chopped basil leaves, 1/2 clove of garlic, and a drizzle of oil.
  • 2 While the zucchini is cooking, take a blender and blend the cream, Gran Campidano, and eggs. Season with salt and pepper. Then add the cooked vegetables to the egg mixture.
  • 3 Place the puff pastry on a round baking pan, leaving the parchment paper in the pastry package, and prick all over with a fork. Line the bottom with goat cheese slices and pour the previously prepared filling over them. Bake in a preheated oven at 180°C (350°F). After about 15 minutes of baking, drain the halved datterini tomatoes from the oil and arrange them in a radial pattern on top of the savory tart to decorate. Bake for another 20 minutes and serve warm.
