Sassari-style Fainè
Description
The Sardinian version of chickpea farinata, fainè alla sassarese, is a tasty and inviting dish, perfect to serve as an appetizer at a pizza-themed dinner.
The difference from the classic Genoese recipe lies in the fact that the Sardinian version enriches the chickpea flour mixture with additional ingredients.
In our recipe, we suggested adding onions and rosemary, but feel free to try it with sausage, mushrooms, artichokes, or other tasty ingredients according to your preference.
Ingredients

- Chickpea flour 200 g
- Water 500 ml
- Onions 80 g
- Extra virgin olive oil 200 ml
- Dried rosemary 13 g
- Salt 6 g
- Pepper 4 g
Instructions
- 1 To prepare fainè alla sassarese, start by pouring the water into a large bowl. Add the salt and gradually sift in the chickpea flour, whisking well to prevent any lumps from forming.
- 2 Let the batter rest, and meanwhile peel and thinly slice the onions. Then, grease a round non-stick baking pan with half of the oil and pour in the chickpea flour mixture. Add the sliced onions, chopped dried rosemary, pepper, and drizzle the remaining oil on top.
- 3 Place the pan in a preheated oven at 200°C (390°F) and bake for 30 minutes, or until the mixture turns a golden brown color.
- 4 Once the cooking time is up, take the pan out of the oven, let it cool slightly, then portion and serve the fainè alla sassarese.
