Description

Lobster today is a refined and sought-after ingredient, perfect for special occasions. In the past, in Sardinia, particularly around Alghero, lobsters were so abundant that they were considered a poor person’s food.

Baked lobster is a delicious appetizer that comes from this old Sardinian tradition, where lobsters were a treat for poorer families who caught and cooked them in many different ways—each more delicious than the last.

  • Parsley sprigs 2
  • Lemons 3
  • Extra virgin olive oil q.b.

  • Pepper q.b.

Instructions

  • 1 Baked lobster is simple to prepare: start by halving the lobsters and coating them with a flavorful emulsion. First, prepare the emulsion. Finely chop the parsley and squeeze the lemons, pouring the juice into a bowl. Add the chopped parsley, enough olive oil, salt, and pepper, and whisk with a fork to combine the ingredients.
  • 2 Cut the lobsters lengthwise and place them on a baking tray lined with parchment paper, shell side down and meat side up. Pour the lemon, parsley, and olive oil emulsion over the lobsters.
  • 3 Bake in a preheated oven at 200°C (390°F) for about 15-20 minutes. Once cooked, remove from the oven and serve immediately. Enjoy!
