Description

Pani indorau, also known as pai n’dorau in Sardinian, is a quick and simple treat from the island.

It’s a recipe designed to reuse leftovers, and in particular to avoid wasting stale bread, transforming it into a delicious dish.

You can have it for breakfast or as a snack, or use it as bread during a meal.

This recipe is for the classic, savoury version of pani indorau, but for those with a sweet tooth, try substituting salt with sugar for an irresistible sweet version!

Instructions

  • 1 To prepare pani indorau, first beat the eggs in a large bowl and add a little salt.
  • 2 Pour the milk into a second bowl, dip the stale bread slices in it, wetting both sides, then dip them in the whisked eggs.
  • 3 Heat the extra virgin olive oil in a pan and cook the bread slices on both sides, turning them midway through cooking, until the surface turns golden.
  • 4 Serve the pani indorau slices hot with the ingredients of your choice (local cold cuts and cheese, for example).
