- Sardinian spiny artichokes 360 g
- Potatoes 240 g
- Lemon 50 g
- Garlic 6 g
- Parsley 15 g
- Chili pepper 3 g
- Extra virgin olive oil 25 ml
- Salt 5 g
Instructions
- 1 To prepare carciofi alla sassarese, start by cleaning the vegetables. Peel and rinse the potatoes, then cut them into chunks. Clean the artichokes by removing the tough outer leaves and the sharp tips, then quarter them and slice the stems.
- 2 Soak the artichokes in a bowl of water with lemon juice to keep them from darkening. Meanwhile, finely chop the garlic and parsley, and sauté them in a large pan with olive oil and chili pepper.
- 3 Drain the artichokes well and add them to the pan. Season with salt and pepper, and cook over high heat for about 10 minutes, stirring occasionally.
- 4 Add the potato chunks and a glass of warm water, cover the pan, and let everything simmer for about 30 minutes, stirring from time to time.
- 5 Once cooked, turn off the heat, sprinkle with chopped parsley, and serve your Sassari-style artichokes hot or at room temperature.
