Sardinian-style pickled olives are a simple and tasty recipe that will allow you to enrich your summer appetizers with an inviting snack.

Preserving in brine is a good method for preserving and flavoring foods, and it has the advantage of being simple to do: it requires just a few ingredients: water, salt, whatever you want to preserve, and any flavorings .

In our recipe we suggested enriching the fresh flavour of the olives with the aromas of fennel and bay leaves , but you can make other additions to your taste, for example a little chilli pepper .

  • Green olives 500 g
  • Water 2000 ml
  • Salt 200 g
  • Bay leaves 20 g
  • Wild fennel 20 g

Instructions

  • 1 To prepare Sardinian-style pickled olives, start by washing the olives thoroughly under running cold water, then dry them with a kitchen towel.
  • 2 Place a pot with 2 litres of water on the stove and bring it to the boil, then pour in 200 g of salt along with the bay leaves and wild fennel and let it boil for a few minutes until the salt has dissolved.
  • 3 Once the time has passed, turn off the heat and let it cool, then arrange the olives in airtight glass containers.
  • 4 Pour the filtered decoction into containers and seal them tightly. Store your Sardinian-style pickled olives in a cool, dark place for at least 30 days before serving.
