Instructions

Tips Consiglio
  • 1 When making the ricotta and spinach pie, you must first cook the spinach: wash it thoroughly and place it in a high-sided pan with 2 tablespoons of extra virgin olive oil and a clove of garlic. Season with salt and cook for about 10 minutes, covering the pan with a lid. Once cooked, remove the garlic, squeeze the spinach well, and transfer it to a cutting board. Then, finely chop it with a knife.
  • 2 Melt the ricotta in a bowl and add the egg, grated cheese, a pinch of salt, a generous grind of pepper, and nutmeg.
  • 3 Mix well, then add the chopped spinach and mix again to combine all the ingredients.
  • 4 Unroll the round puff pastry sheet and place it in a sufficiently sized round baking pan along with its parchment paper. Prick the bottom with a fork and pour in the ricotta and spinach filling. Using a spoon, spread the mixture evenly inside the puff pastry shell and level it.
  • 5 Fold the edges of the puff pastry inward to form a nice crust for the pie, and bake the ricotta and spinach pie in a preheated oven at 180°C (350°F) for about half an hour. After removing it from the oven, let the ricotta and spinach pie rest for about ten minutes before serving.
