- Spinach 500 g
- Puff pastry or brisée pastry 1
- Eggs 1
- Parmesan cheese 100 g
- Garlic 1 spicchi
- Extra virgin olive oil 2 cucchiai
- Nutmeg q.b.

When making the ricotta and spinach pie, you must first cook the spinach: wash it thoroughly and place it in a high-sided pan with 2 tablespoons of extra virgin olive oil and a clove of garlic. Season with salt and cook for about 10 minutes, covering the pan with a lid. Once cooked, remove the garlic, squeeze the spinach well, and transfer it to a cutting board. Then, finely chop it with a knife.

Melt the ricotta in a bowl and add the egg, grated cheese, a pinch of salt, a generous grind of pepper, and nutmeg.

Mix well, then add the chopped spinach and mix again to combine all the ingredients.

Unroll the round puff pastry sheet and place it in a sufficiently sized round baking pan along with its parchment paper. Prick the bottom with a fork and pour in the ricotta and spinach filling. Using a spoon, spread the mixture evenly inside the puff pastry shell and level it.

Fold the edges of the puff pastry inward to form a nice crust for the pie, and bake the ricotta and spinach pie in a preheated oven at 180°C (350°F) for about half an hour. After removing it from the oven, let the ricotta and spinach pie rest for about ten minutes before serving.
