- fresh mozzarella (Arborea) 300 g
- Eggs 3
- Whole milk 30 ml
- Breadcrumbs 200 g
- Flour 70 g
- Salt q.b.

Slice the mozzarella into pieces about 1 cm thick. Remove the crust from the bread slices and shape them as desired (square, rectangular, or triangular), making sure all slices are uniform in size.

Arrange the bread slices on your work surface. Place a slice of mozzarella in the center of half the bread slices, leaving the edges free, then cover with the remaining plain bread slices.

In a shallow bowl, beat the eggs with a fork, adding 3 tablespoons of milk and a pinch of salt. Dip the prepared sandwiches in the egg mixture, coating all sides thoroughly. Then pass them through flour, dip in egg again, and finally coat completely with breadcrumbs.

Heat a generous amount of oil in a frying pan. When hot, fry the mozzarella sandwiches until golden brown. Remove and drain on paper towels to remove excess oil. If you prefer, you can bake them instead of frying. Serve hot.

Many people often wonder about the origins of Mozzarella in Carrozza. Despite its regal-sounding name, this dish is actually a humble creation from Campania, born as a way to reuse stale bread and mozzarella from previous days that was no longer fresh.
There are various anecdotes and explanations about how the recipe got its name: some say it’s called this because the mozzarella was placed between two golden slices of bread, evoking the image of a carriage. In a more imaginative interpretation, the melting mozzarella acted like reins guiding the slices—the “carriage” it rested on.
The name of this delicious recipe also inspired a famous artwork by Gino De Dominicis, which references the myth behind Mozzarella in Carrozza. The installation featured an actual carriage with a mozzarella placed inside.
