Roast Rabbit
Description
Here’s a main course featuring rabbit meat—a flavorful white meat ideal for Sunday lunch or to impress friends and family when you have guests. Cooking rabbit is quite simple, and in this recipe, it will be oven-roasted. We’ll also prepare a side of roasted potatoes to cook together with the meat.

Ingredients

- Arborea butter 50 g
- Rabbit pieces 1000 g
- Potatoes 500 g
- White wine q.b.
- Aromatic herbs q.b.
- Salt q.b.
- Pepper q.b.
- Extra virgin olive oil q.b.
Instructions
- 1 Put some olive oil and butter in a pan. Once hot, add the rabbit pieces and cook them on all sides for a while, deglazing with white wine. Turn off the heat when the meat turns golden and the wine has completely evaporated.
- 2 Now, cut the potatoes into medium-sized chunks and season with salt and pepper to taste. Add a drizzle of olive oil and a mix of chopped aromatic herbs to enhance the flavor and give the dish a wonderful aroma.
- 3 Once ready, place both the potatoes and the rabbit in a baking dish lined with parchment paper to proceed with roasting. Drizzle a little more olive oil on top. To prevent the meat from drying out, cover the baking dish with aluminum foil for the first 30 minutes of cooking in the oven.
- 4 Place the baking dish in a preheated oven at around 200°C (392°F) and roast for about 45 minutes, checking the cooking occasionally. Remove the aluminum foil during the last 15 minutes to allow the meat to brown nicely. The rabbit should be tender and perfectly cooked. Then, serve on a serving platter. Enjoy your meal!
