Pork Rolls with Cannonau Wine

Pork rolls with Cannonau wine are an extremely flavorful meat dish — perfect for family lunches, dinners, or when you have guests but not much time to spend in the kitchen.
Easy to prepare, these pork rolls are cooked in Sardinia’s signature Cannonau red wine and filled with a pecorino cheese stuffing that captures the aromas and flavors of the island. They’re an ideal addition to any traditional Sardinian menu. Discover how to make them!

- Pork loin slices 400 ml
- Cannonau red wine 200 ml
- Sandwich bread 8
- Grated pecorino 40 g
- Ham 50 g
- Garlic clove 1
- Parsley 50 g
- Eggs 1
- UHT full cream milk Arborea 200 ml
- Arborea butter 20 g
- Rosemary 1
- Breadcrumbs q.b.
- Flour q.b.
- Salt q.b.
- Pepper q.b.
Instructions
- 1 Start by preparing the filling for the pork rolls. Cut the bread slices into cubes and soak them in milk. Meanwhile, finely chop the garlic and parsley, and also mince the cooked ham.
- 2 After about 10 minutes, squeeze the soaked bread well and place it in a bowl with the chopped garlic, ham, and parsley. Add the pecorino cheese and the egg, then mix everything together by hand until you get a uniform filling.
- 3 Lay the pork slices flat and tenderize them with a meat mallet. Season lightly with salt, place a spoonful of filling on each slice, roll them up, and secure with a toothpick.
- 4 Lightly coat the rolls in flour and brown them in a pan with a few tablespoons of oil, turning them on all sides. When golden, pour in the Cannonau wine to deglaze. Once the alcohol has evaporated, season with salt and pepper, add the rosemary sprig, cover, and cook over medium heat for about 10 minutes. If the sauce becomes too thick, add a little water.
- 5 When the rolls are done, remove them from the pan. To prepare the sauce, discard the rosemary and add one tablespoon of flour and a knob of butter to the cooking juices. Cook for another 3 minutes, stirring well to prevent lumps. Pour the sauce into a bowl and serve it alongside the Cannonau pork rolls.
