Sardinian-Style Wild Rabbit

- Rabbit 1500 g
- Vinegar q.b.
- Onion 50 g
- White wine 400 ml
- Parsley 30 g
- Extra virgin olive oil 30 ml
- Salt 8 g
- Pepper 4 g
Instructions
- 1 To prepare Sardinian-style wild rabbit, first wash the rabbit with vinegar, pat it dry, and cut it into pieces.
- 2 Finely chop the onion and parsley, and sauté them in a pan with extra virgin olive oil. Then add the rabbit pieces and cook for a few minutes, stirring with a wooden spoon.
- 3 Once the rabbit has browned, deglaze with white wine, season with salt and pepper, and cook covered for about 30 minutes.
- 4 Once the time has passed, turn off the heat, remove the lid, and serve the Sardinian-style wild rabbit on plates.
