Rabbit meat is tender and delicious, and when slow-cooked with onion and parsley, it becomes even more flavorful.

In this recipe, you’ll find a simple version of the dish, but if you want to add an extra touch of flavor, you can include olives or sun-dried tomatoes.

  • Rabbit 1500 g
  • Vinegar q.b.
  • Onion 50 g
  • White wine 400 ml
  • Parsley 30 g
  • Extra virgin olive oil 30 ml
  • Salt 8 g
  • Pepper 4 g

Instructions

  • 1 To prepare Sardinian-style wild rabbit, first wash the rabbit with vinegar, pat it dry, and cut it into pieces.
  • 2 Finely chop the onion and parsley, and sauté them in a pan with extra virgin olive oil. Then add the rabbit pieces and cook for a few minutes, stirring with a wooden spoon.
  • 3 Once the rabbit has browned, deglaze with white wine, season with salt and pepper, and cook covered for about 30 minutes.
  • 4 Once the time has passed, turn off the heat, remove the lid, and serve the Sardinian-style wild rabbit on plates.
