Roasted Kid Goat

- Kid goat 1500 g
- Garlic 2
- Parsley 1
- Basil leaves 5
- Myrtle leaves 5
- Fette di lardo 4
- Breadcrumbs 2 cucchiai
- Vegetable broth 100 ml
- Extra virgin olive oil q.b.
- Salt q.b.
- Pepper q.b.
Instructions
- 1 Begin preparing the roast kid goat by seasoning the meat with salt and pepper and wrapping it in the slices of lardo. Tie the meat with kitchen twine and place it in a well-oiled roasting pan.
- 2 Preheat the oven to 180°C (356°F), pour 100 ml of vegetable broth into the roasting pan, and roast the kid goat for about 30 minutes. Meanwhile, prepare a breadcrumb topping by mixing breadcrumbs, garlic, parsley, basil, and myrtle leaves. Sprinkle this mixture over the meat after about 30 minutes of cooking.
- 3 Return the kid goat to the oven and continue cooking for another 5 minutes. Remove from the oven, let it rest for about 10 minutes, and serve.
