Roast mutton comes directly from that tradition: a simple yet very flavorful recipe, perfect to serve for Sunday lunch or when you have guests who particularly enjoy the taste of mutton. And preparing it is really, really easy. Here’s what you need to do.

  • Mutton 1500 g
  • New potatoes 1000 g
  • Garlic 2 spicchi
  • Parsley 1 ciuffi
  • Dried tomatoes 3
  • Extra virgin olive oil q.b.
  • Salt q.b.

Instructions

  • 1 Roasting mutton isn't difficult. The key is to let it marinate for at least two hours, so it can absorb all the flavors, and to pay attention to the cooking process, especially if you choose to grill it. Start with the marinade. Place the mutton (ribs, shoulder) in a large container, sprinkle with chopped garlic, parsley, and sun-dried tomatoes, and let it rest in the refrigerator for at least two hours.
  • 2 When it's almost time to cook it, preheat the oven to 180°C (350°F) and peel and wash the new potatoes. Brush the meat with a little extra virgin olive oil, arrange it in a large rectangular baking dish, and bake.
  • 3 After about 30 minutes of cooking, season the potatoes lightly with salt and add them to the roasting mutton. Continue cooking for another 30 minutes. Once done, remove the roasted mutton from the oven and let it rest for about 10 minutes before serving.
