For the dough
  • 00 Flour 135 g
  • Starch 67 g
  • Arborea High Quality Fresh Milk 55 ml
  • Whole cane sugar 100 g
  • Arborea butter 67 g
  • Eggs 2
  • Baking powder 10 g
  • Vanilla 3 g

For the filling
  • Arborea Ricotta 335 g
  • Eggs 2
  • Sugar 35 g
  • Zest of orange 3 g

Instructions

  • 1 Whisk the eggs, sugar, and vanilla together using an electric mixer until light and fluffy. Melt the butter in a double boiler, add it to the milk, and gently fold it into the mixture in small portions. Finally, sift the flour, starch, and baking powder together and fold into the egg mixture by spoonfuls, stirring with a spatula from the bottom up.
  • 2 Now proceed with the preparation of the filling by pouring the ricotta, which you have previously drained for a few hours, into a bowl and softening it with an electric whisk, then add the eggs and sugar and mix until you obtain a smooth cream.
  • 3 Now, take some aluminum tart molds, butter them and flour them. Add the batter, filling 1/3 of the mold. Spoon the ricotta filling into the center, filling the mold 2/3 full. Cover with a thin layer of batter. Bake the tarts at 180°C (350°F) for about 20 minutes, then serve cold.
