Catalan-Style Lobster
Description
Catalan-style lobster is a flavorful and simple seafood main course that adds an elegant and refined touch to your menu.
Highly appreciated in Sardinian cuisine, especially in the Alghero area, this dish can be served both in summer and winter. Using fresh, just-caught ingredients will ensure the best results.
For an extra touch, after cleaning the lobster, save the shell pieces to create an attractive and original plating.

- Lobster 1000 g
- Tomato 600 g
- Onion 60 g
- Chives 20 g
- Vinegar 100 ml
- Lemon 50 g
- Extra virgin olive oil 35 ml
- Salt 12 g
- Pepper 6 g
Instructions
- 1 To prepare Catalan-style lobster, start by immersing the lobster in a pot of salted boiling water and cook for about 20 minutes.
- 2 Once cooked, turn off the heat and let it cool completely in the cooking water.
- 3 Meanwhile, thinly slice the onion and let it macerate in vinegar for 10 minutes. Wash, trim, and cut the tomatoes into small pieces, and set aside.
- 4 Drain the lobster, split it lengthwise, and remove the meat, cutting it into bite-sized pieces. Place the lobster meat on a serving plate with the well-drained tomatoes and onions, and dress with an emulsion made by mixing olive oil, lemon juice, salt, and pepper.
- 5 Let the flavors meld for a few minutes, then serve the Catalan-style lobster garnished with chive strands.
