Instructions

  • 1 To prepare Catalan-style lobster, start by immersing the lobster in a pot of salted boiling water and cook for about 20 minutes.
  • 2 Once cooked, turn off the heat and let it cool completely in the cooking water.
  • 3 Meanwhile, thinly slice the onion and let it macerate in vinegar for 10 minutes. Wash, trim, and cut the tomatoes into small pieces, and set aside.
  • 4 Drain the lobster, split it lengthwise, and remove the meat, cutting it into bite-sized pieces. Place the lobster meat on a serving plate with the well-drained tomatoes and onions, and dress with an emulsion made by mixing olive oil, lemon juice, salt, and pepper.
  • 5 Let the flavors meld for a few minutes, then serve the Catalan-style lobster garnished with chive strands.
