- Moray eel 1000 g
- Semolina 80 g
- Lemon 1
- Frying oil q.b.
- Salt q.b.
Instructions
- 1 The most challenging part of this recipe is cleaning the moray eel. Place it on your work surface, open the belly to remove the entrails, then cut off the head (be careful, the teeth are very sharp) and the tail, which contains many bones. Rinse the fish thoroughly.
- 2 Pat the moray eel dry and cut it into thick slices. Dredge each piece in the durum wheat semolina.
- 3 Heat plenty of frying oil in a pan. Once hot, fry the moray eel pieces until golden brown. Drain them and place them on a plate lined with paper towels to absorb excess oil.
- 4 Sprinkle the fried moray eel with salt, garnish with lemon slices, and serve hot.
