Description

Lobster is the perfect ingredient to create an elegant and delicious seafood dish. Once boiled, it can be seasoned to taste, as in the traditional recipe for Algherese-style lobster.

In the Alghero area, this dish is made using the day’s fresh catch and seasoned simply, resulting in a main course or appetizer that is both simple and refined.

In our recipe, we paired the delicate flavor of the lobster with the intense taste of arugula. For a milder flavor, you can substitute arugula with another type of salad, such as lettuce or valerian.

  • Lobster 1000 g
  • Tomato 200 g
  • Onion 150 g
  • Carrots 80 g
  • Parsley 20 g
  • Arugula 20 g
  • Extra virgin olive oil 40 ml
  • Vinegar 20 ml
  • Salt 4 g

Instructions

  • 1 Bring a pot of water to a boil. Add the lobster along with the peeled and washed onions, carrots, and parsley. Cook for 20 minutes.
  • 2 Turn off the heat and let the lobster cool slightly in its cooking water. Once warm, remove the lobster with tongs, crack the shell, and extract the meat, cutting it into pieces.
  • 3 Wash and slice the tomatoes, wash and dry the arugula, and arrange them on a serving plate to form a bed for the lobster pieces.
  • 4 Prepare a dressing with olive oil, vinegar, and salt. Drizzle over the lobster and vegetables, let it marinate for about ten minutes, and serve.
