The term “scabecciu” refers to a type of seasoning used mainly in southern Sardinia, where meat, fish, or vegetables are flavored by soaking them in wine or, more often, vinegar — either during cooking or afterward.
In this recipe, we’ve paired the cod with potatoes, a winning combination that’s sure to please all your guests.

- Soaked and fully desalted cod fillets 533 g
- Potatoes 333 g
- Tomato 267 g
- Onions 67 g
- White wine 67 ml
- Wine vinegar 67 ml
- Parsley 13 g
- Extra virgin olive oil 20 ml
- Salt 3 g
Instructions
- 1 To prepare baccalà a scabecciu, start by blanching the tomatoes and removing their skins and seeds. Then peel the potatoes and finely chop the garlic, parsley, and onion.
- 2 Heat the olive oil in a large pan, add the chopped vegetables and the tomatoes, and let them brown lightly. Deglaze with white wine, season with salt, and mix well.
- 3 Add the cod fillets, turning them on both sides. Pour in the vinegar and let everything cook over high heat for about 10 minutes to absorb the flavors.
- 4 Add the diced potatoes, lower the heat, cover with a lid, and let simmer for 30 minutes.
- 5 When cooking is complete, turn off the heat and serve your baccalà a scabecciu warm or at room temperature, as you prefer.
