Fried Gobies

In the Campidano area of Sardinia, it’s common to prepare delicious fried gobies, an ideal fish main course to serve at family lunches, dinners, or when hosting guests. Here’s how to make them.

- Gobies 600 g
- Lemons 1
- Whole wheat semolina q.b.
- Salt q.b.
- Frying oil q.b.
Instructions
- 1 Preparing fried gobies is simple. First, clean and wash the fish; if you prefer, remove the heads. Pat the gobies dry with paper towels.
- 2 Place some semolina flour in a wide, shallow container and coat the fish in it. Shake them gently to remove any excess flour, then set them aside on a plate until ready to fry.
- 3 Pour plenty of frying oil into a deep saucepan and, once it’s hot, carefully add the gobies. Fry them until they turn golden and crispy, then drain them and place them on a plate lined with paper towels to absorb the excess oil.
- 4 Lightly salt the fried gobies and, if you like, add a touch of lemon juice before serving them hot.
