Speck and Ricotta Rolls

- Arborea Ricotta 600
- Parsley q.b.
- Pepper q.b.
Instructions
- 1 Thinly slice the speck, preferably using a slicer, to obtain wide, even slices — or ask your delicatessen to do it for you.
- 2 In a bowl, soften the ricotta using an immersion blender, then add finely chopped parsley and a pinch of pepper. Mix well.
- 3 Using a spoon, spread a layer of ricotta cream over each slice of speck, roll them up, and serve.<br>
