  • Wholemeal breadcrumbs 200 g
  • Arborea A-yo Creamy White Yogurt 500 g

Instructions

  • 1 The first thing to do to make this tasty dish is to cook the brown rice: put a pot with plenty of water on the stove and bring to a boil, then add a handful of salt, then the brown rice, and let it cook over low heat, stirring occasionally.
  • 2 While you're waiting for the rice to cook, prepare the yogurt sauce: pour the plain yogurt into a bowl, then wash the lime and grate the zest into the bowl with the yogurt. Then, finely chop a sprig of chives and add them to the yogurt, stirring until smooth. Season with salt and pepper to taste. Divide the sauce into two parts: refrigerate one part and set aside the other in a bowl.
  • 3 Take the chicken breast, cut it into cubes, and marinate the pieces in the reserved yogurt sauce. Cover with plastic wrap, refrigerate, and let rest for about an hour.
  • 4 Shake off any excess sauce and coat the bites in breadcrumbs. Heat the extra virgin olive oil in a large skillet, then add the diced chicken breast and brown over high heat, covered.
