Peach semifreddo

- Arborea skimmed UHT milk 67 g
- Egg yolks 3
- Sugar 67 g
- Lemon 1
- Peach puree 67 g
- Fresh peaches 2
Instructions
- 1 Take the cream, pour it into a bowl and whip it with an electric whisk. Once it becomes frothy, place it in the refrigerator. For best results, we recommend placing the cream in the freezer for half an hour before whipping.
- 2 In a large bowl or a stand mixer, combine the egg yolks, sugar, and lemon zest and whisk together. Add the warmed milk and transfer to a small saucepan. Heat to 82°C, stirring constantly with a whisk. Transfer the mixture to a cold container and let it cool, stirring constantly to speed up the process. Once it's lukewarm, fold it into the whipped cream, stirring gently with a spatula. Finally, add the peach puree.
- 3 Pour the mixture into a mold lined with parchment paper and place the semifreddo in the freezer for at least 12 hours. Before serving, remove it from the freezer and let it come to room temperature. If desired, top with a few thin peach slices or crushed amaretti biscuits.
