In Sardinia, parmesan sole is considered the best way to fully enjoy the delicate flavor of sole: it involves boiling the sole and seasoning it with butter and parmesan cheese. It’s one of the few Sardinian recipes that uses butter and pairs cheese with fish. Follow our recipe to enjoy this flavorful and delicate dish.

  • Sole 1200 g
  • Arborea butter 100 g
  • Grated Gran Campidano 200 g

Instructions

  • 1 To prepare the parmesan sole, start by cleaning and scaling the fish, removing the innards and gills. Place it in a large pot with a little cold water and a teaspoon of salt. Cook for about 20 minutes.
  • 2 Meanwhile, melt the butter in a saucepan and, as soon as the sole is cooked, arrange it on a serving dish and season it with the melted butter and grated Parmesan cheese.
  • 3 Serve immediately at the table.
