In Sardinia, parmesan sole is considered the best way to fully enjoy the delicate flavor of sole: it involves boiling the sole and seasoning it with butter and parmesan cheese. Instructions
- 1 To prepare the parmesan sole, start by cleaning and scaling the fish, removing the innards and gills. Place it in a large pot with a little cold water and a teaspoon of salt. Cook for about 20 minutes.
- 2 Meanwhile, melt the butter in a saucepan and, as soon as the sole is cooked, arrange it on a serving dish and season it with the melted butter and grated Parmesan cheese.
- 3 Serve immediately at the table.
