- Large green olives 250 g
- Parsley 1 ciuffi
- Garlic 1 spicchi
- Salt q.b.
- Extra virgin olive oil 40 ml
- White wine vinegar 20 ml

Tips
- 1 Preparing olive a scabecciu is quite simple, though it requires a bit of patience. Start by scoring each olive with 3 or 4 vertical cuts. Place them in a large container and cover with salt. Let them rest for about one week, stirring once a day after the first 3 days so they absorb the salt evenly.
- 2 After a week, bring a pot of water to 90°C and pour it over the olives. Let them cool completely.
- 3 Prepare a dressing with two parts extra virgin olive oil and one part white wine vinegar. Add finely chopped garlic and parsley. Transfer the olives into a glass jar and cover them with the flavored oil.
