To prepare butter cookies, you’ll start by making shortcrust pastry—a straightforward process that allows for creativity in the kitchen. You can decorate the cookies with dark chocolate chips, sugar glaze, or simply dust them with powdered sugar.
The dough can also be flavored with ingredients like orange or lemon zest. Instead of a vanilla pod, you can use vanilla extract, which is more economical but less aromatic.

- Arborea butter 100 g
- Flour 250 g
- Baking powder 8 g
- Egg yolk 2
- Vanilla pod 1

Instructions
- 1 Start by combining the butter with the sugar—a process called sabbiare (sanding). You can do this by hand or in a stand mixer with the paddle attachment. Mix quickly until you get a smooth, homogeneous mixture. Add the yolks of two eggs, then the flour, the vanilla pulp, and the baking powder, mixing until all ingredients are fully incorporated. Work quickly at this stage to prevent gluten formation, which will ensure your cookies remain crisp.
- 2 Once the ingredients are well combined, transfer the dough to a work surface and knead briefly by hand. At this point, you can also add chocolate chips if desired. Wrap the dough in plastic wrap and refrigerate for at least two hours or, preferably, overnight.
- 3 Roll out the dough with a rolling pin. Using a knife or cookie cutters, cut the dough into small cookie shapes and place them on a baking sheet lined with parchment paper.
- 4 Bake the cookies for 10–15 minutes at 180°C (356°F), checking occasionally to ensure they do not dry out too much. Once baked, let them cool and dust with powdered sugar. Enjoy!
