- Baby octopus 500
- Tomato pulp 400
- Dry white wine q.b.
- Chili peppers 2
- Garlic 2 spicchi
- Extra virgin olive oil 3 cucchiai
- Salt q.b.
Instructions
- 1 Clean the octopus: Carefully clean the baby octopus by turning the head inside out to remove the innards. Rinse thoroughly under running water, then remove the beak and eyes.
- 2 Prepare the base: Finely chop the garlic and chili peppers. Sauté them in a pan with 2 tablespoons of extra virgin olive oil for about 1 minute. Add the octopus and deglaze with the white wine.
- 3 Cook in tomato sauce: Once the alcohol has evaporated, add the crushed tomatoes. Lower the heat, cover the pan, and let the octopus simmer gently for about 20 minutes.
- 4 Season: Halfway through cooking, add salt if needed and cook for another 15 minutes. Be careful not to overcook, or the octopus will become rubbery.
- 5 Rest and serve: Once cooked, let the Sardinian-style octopus rest in the pan for about 10 minutes before serving.
