- UHT full cream milk Arborea 1000 ml
- Sugar 75 g
- Grated lemon zest 5 g
- Rennet drops 5
Instructions
- 1 Preparing callau durci is quite simple — just pay close attention to the milk temperature, which should never reach a boil. Pour the milk into a high-sided saucepan and warm it gently over low heat.
- 2 When the milk is lukewarm, add the grated lemon zest, sugar, and rennet, then stir everything together. Cover the saucepan with a lid and let it rest until the curd forms.
- 3 Once the callau durci has set, refrigerate it for a few hours before serving. Serve well chilled.
