Banana and Yogurt Muffins

- Arborea butter 13 g
- Bananas 2
- 00 Flour 83 g
- Whole wheat flour 83 g
- Small eggs 2
- Brown sugar 135 g
- Vanilla Baking Powder 11 g
- Seed oil 33 ml
Instructions
- 1 Preheat the oven to 180°C (356°F). Peel the bananas, ensuring they are very ripe, cut them into pieces, and place them in a blender. Add the yogurt, oil, eggs, and brown sugar.
- 2 Sift in the flours and vanilla baking powder, then gently mix until you obtain a smooth, homogeneous batter.
- 3 Grease the muffin tins (or use paper liners and place them in the tins to hold their shape) and pour in the batter. Place on a baking tray and bake for about 15–20 minutes. Check doneness using the toothpick test: if it comes out wet, bake a few more minutes; if dry, the muffins are ready.

The word “muffin” first appeared in England in 1703 as “moofin.” Its origins are uncertain: some believe it comes from the French “mouflet,” meaning “soft,” while others trace it to the German “muffen,” meaning “small cakes.”
The first muffins, dating back to the mid-1800s, were mainly eaten by servants and made with leftover bread and mashed potatoes, combined with leftover biscuit dough. The mixture was then fried, creating very crunchy small muffins. During the Victorian era, these treats gained popularity among wealthier classes, eventually becoming a favorite snack for lords during tea time.
In London, there were even “Muffin men” who sold their creations by serving them to passersby from trays hung around their necks.
