Prawns with Vernaccia Wine
Description
Vernaccia di Oristano is a dry white wine from Sardinia, enjoyed both as a table wine and as a cooking ingredient — as featured in our Prawns with Vernaccia Wine recipe.
To make this dish at its best, it’s ideal to use large, meaty red prawns, which will be seasoned with a flavorful and slightly spicy emulsion that makes them truly irresistible.

- Red prawns 1000 g
- Vernaccia di Oristano 250 ml
- Extra virgin olive oil 150 ml
- Garlic 15 g
- Parsley 15 g
- Salt 3 g
- Chili pepper 3 g
Instructions
- 1 To prepare Prawns with Vernaccia Wine, start by washing and patting dry the red prawns.
- 2 Finely chop the garlic, parsley, and chili pepper, then mix them with olive oil to create an emulsion.
- 3 Arrange the prawns side by side in an oiled baking dish, forming a single layer without gaps. Sprinkle with salt and drizzle with the prepared emulsion.
- 4 Place the baking dish in a preheated oven at 170°C (340°F) and cook for 5 minutes. Then pour the Vernaccia wine over the prawns, cover the dish with aluminum foil, and continue cooking for another 10 minutes.
- 5 Once the time has passed, remove the baking dish from the oven and serve the Prawns with Vernaccia Wine slightly warm.
