Wild Garlic Pesto
Description
Wild garlic pesto is a sauce made with wild garlic, a wild plant that grows wild in the spring. Unlike pesto alla Genovese, which is made with pine nuts and basil, wild garlic pesto’s main ingredients, in addition to this herb, also include almonds or walnuts, and grated pecorino cheese .
Pesto made with wild garlic leaves is excellent as a pasta sauce, or spread on crostini or pane carasau bread for a tasty appetizer. It can also be used as a side dish for roasts and other meat dishes. Here’s how to make it.

- Arborea Gran Campidano 20 g
- Wild garlic leaves 100 g
- Almonds 40 g
- Extra virgin olive oil 70 ml
- Mature Sardinian Pecorino DOP Farm Girau 50 g
- Rock salt q.b.
- Pepper q.b.
Instructions
- 1 Making wild garlic pesto is incredibly simple. First, toast the almonds in a nonstick pan until golden brown.
- 2 Rinse the wild garlic leaves under running water and dry them thoroughly. Then, place them in a blender along with a pinch of coarse salt, a pinch of pepper, and the toasted almonds. Add a drizzle of extra virgin olive oil and blend.
- 3 Once the ingredients are slightly chopped, add another 20 ml of oil. Once the wild garlic pesto has a creamy consistency, transfer it to a bowl and add the grated pecorino, parmesan, and the remaining oil. Stir to combine everything well. Your wild garlic pesto is now ready to use as desired.
