Stuffed sardines
Description

- Eggs 1
- Egg whites 1
- Stale bread crumbs 50 g
- Parsley 1 ciuffi
- Sardinian Pecorino 30 g
- Garlic 1 spicchi
- Salted anchovies 2
- UHT full cream milk Arborea 150 ml
- Salt q.b.
- Pepper q.b.
- Breadcrumbs q.b.
- Extra virgin olive oil q.b.
- Semolina flour q.b.
- Frying oil q.b.
Instructions
- 1 When you're preparing stuffed sardines, you need to make sure you have some nice, fresh fish. Start by washing the sardines under running water, removing the heads and guts, leaving the tails on, rinsing them thoroughly, opening them out like a book, drying them thoroughly, and placing them on a plate.
- 2 Cook the filling. While you clean the sardines, soak the breadcrumbs in milk, rinse the anchovies under running water to remove the salt, and finely chop them along with the garlic clove and parsley. Squeeze the stale bread well and combine all the ingredients in a bowl along with 1 whole egg and 1 egg white, a drizzle of extra virgin olive oil, and the grated pecorino cheese. Season everything with a little salt and pepper and begin working the mixture with your hands. If it's too soft, add a little more breadcrumbs.
- 3 Stuff the sardines, one by one, placing a spoonful of filling in the center and closing them to hold the filling in.
- 4 Coat the sardines in semolina flour and fry them in plenty of oil. When they're ready, drain them and place them on a plate lined with paper towels to drain the excess. Season the stuffed sardines with salt and serve hot. Enjoy!
