This recipe is simple and requires just a few ingredients — mainly fresh artichokes, breadcrumbs, and grated Gran Campidano cheese, which together create a golden, flavorful crust when baked.

- Grated Gran Campidano cheese 40 g
- Breadcrumbs 40 g
- Artichokes 1000 g
- Lemons 1
- Salt q.b.
- Pepper q.b.
- Extra virgin olive oil q.b.
Instructions
- 1 Start by cleaning the artichokes: trim half of the stem and remove the outer leaves, cutting away the tough edges. Slice off the pointed tops, then halve each artichoke and remove the fuzzy choke inside. Rinse them well under cold running water, then soak them in a bowl with water and lemon juice to prevent browning.
- 2 Bring a pot of salted water to a boil and cook the artichokes for about 10 minutes to soften them slightly.
- 3 In a bowl, mix the breadcrumbs with salt, pepper, grated Gran Campidano cheese, and a drizzle of extra virgin olive oil. Drain the artichokes and coat each one thoroughly in the breadcrumb mixture.
- 4 Arrange the breaded artichokes in a baking dish and sprinkle the remaining mixture over the top. Bake in a preheated oven at 190°C (375°F) for about 30 minutes, until golden and crisp.
