Pillus are an ancient pasta shape, shaped like lasagnette or tagliatelle, and can be boiled in sheep’s broth or simply in salted water, then topped with a hearty meat sauce and plenty of grated cheese.

For the pastry
- Whole wheat semolina 350 g
- Eggs 2
- Egg yolks 100 g
- Chopped onion 1
- Salt q.b.
For the ragù
- Ground beef 300 g
- Onion 1
- Carrot 1
- Tomato puree 400 ml
- Bay leaves 1
- Arborea Gran Campidano q.b.
- Extra virgin olive oil q.b.
- Salt q.b.
Instructions
- 1 Pillus are a type of pasta made with semolina flour and eggs. To make them, mix the semolina flour with 2 eggs, 1 egg yolk, and a pinch of salt. Combine all the ingredients in a bowl and knead until smooth and compact. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
- 2 While the dough rests, prepare the ragù: clean and wash the carrot, peel the onion, and chop both quite finely. Brown the chopped carrot and onion in a pan with 4 tablespoons of extra virgin olive oil, then, after a couple of minutes, add the ground beef and mix well. Let it cook for about 5 minutes, then stir in the tomato puree. When it begins to simmer, season the ragù with salt and 1 bay leaf, reduce the heat, and simmer for about 30 minutes, stirring occasionally to prevent burning.
- 3 Take the dough and roll it out thinly on a lightly floured surface with a rolling pin. Using a pastry wheel, cut out diamonds about 2 cm wide.
- 4 Cook the pillus in plenty of salted water, then pour them into the pan with the ragù to season them and sprinkle them with plenty of grated Parmesan cheese before serving.
